We stumbled upon this little bright spot when we first came to Truth or Consequences several years ago. Carmen's Kitchen happened to be next to our favorite laundry, Soap and Suds. Since our traveling laundry mass needed a several hour stop, we happily ran to the nearest food shop for some tacos. Carmen's Kitchen is a great find - delicious homemade dinners and specials.
We were starved and ordered what we nearly always order - a taco plate and a big burrito plate. When you're hungry, you tend to be boring. Now the seasonings are quite mild. If you're looking for hot sauce/chile pepper challenges, you probably won't find it here. The plates were warm and generous. We had a lot of filling in the burrito and tacos. Rice was tasty and the beans were good. They don't serve refried beans as we were accustomed to from back home. More of a ranch or full bean style - still good!
Since the early days of laundry lunches, we've come to widen our culinary reach at Carmen's! We had a chance to briefly speak with her before dinner one day. It's just her and family in a very small kitchen. She makes it work though - smothered burgers, enchiladas, even a homemade ruben on rye! One of our dinners was the layered enchilada special with Carmen's pulled pork. Side note - for some reason folks layer rather than roll their enchiladas here. I'm good with that. We added a bit of Hatch Green Chile to the dinner and it was perfect. Again - not for those looking for a ton of heat!
The Smothered Burrito plate was quite generous. A great big burrito smothered in cheese, sauce, and of course your choice - red or green? All of it comes with the rice and beans and with those dinners we were more than satisfied.
Friends have reported that they are hung up on Carmen's Smothered Burgers or Huevos Rancheros. That's one thing about the homecooked style meal - you definitely get favorites and order to satisfy those cravings. Next time, I'm going to get some of that cake. She had fudge and lemon cake last we were there and I passed. Not this time!
